MATCHA SUGAR COOKIES

I’m a firm believer that all Mondays are made better with cookies! Especially Matcha Sugar Cookies! Slightly crispy on the outside and soft and chewy on the inside, exactly what you want in a cookie! These are also made with our favorite Matchabar ceremonial grade matcha but you can also use culinary grade matcha.

MATCHA SUGAR COOKIES - MAKES 15-17 cookies

Ingredients:

½ cup butter, softened (1 stick)

1 cup granulated sugar, divided

2 teaspoons matcha powder

1 large egg

1/2 teaspoon vanilla extract

1 ½ cup all-purpose flour

½ teaspoon baking soda

¼ teaspoon cream of tartar

¼ teaspoon salt

Preparation:

Preheat oven to 350°F. Line baking sheet with parchment paper or aluminum foil; set aside. In the bowl of a stand mixer with a paddle attachment, add butter, 3/4 cup sugar and matcha. cream together until smooth, about 1 minute. Add egg and vanilla and beat on medium low.


In a medium bowl, add flour, baking soda, cream of tartar, and salt. Mix well. Add dry mixture to wet ingredients. Mix on low speed until dough forms. Cover and chill dough in refrigerator for 1 hour.

Form dough into small balls. Roll each ball in remaining 1/4 cup sugar. Add to prepared baking sheet. Bake for about 15 minutes or until bottom of cookies are lightly golden brown.
