PUMPKIN PECAN GRANOLA
Pumpkin Pecan Granola - Serves
Granola is just one of those recipes that I never get sick of for some reason. It’s also a recipe that you can adapt and change depending on the time of year! Decided to make this one seasonal with pumpkin seeds and pecans.
Add on top of yogurt, smoothie bowls, oatmeal or enjoy on its own it’s that good. So grab some basic pantry items, a medium bowl and a sheet pan and let’s make some Pumpkin Pecan Granola!
Ingredients:
1 1/2 cups old-fashioned rolled oats
1/2 cup hulled raw pumpkin seeds
1/2 cup hulled raw sunflower seeds
1/2 cup unsweetened coconut chips
1/2 cup raw chopped pecans
1/4 cup pure maple syrup
1/4 cup extra-virgin olive oil
1/4 cup packed light brown sugar
1/4 teaspoon salt
Preparation:
Preheat oven to 300°F and prepare sheet pan with parchment paper. Add all ingredients to a medium bowl and mix well until combined. Add granola to sheet pan in an even layer. Bake granola for about 35-40 minutes, stirring occasionally. Granola should look golden brown and toasted. Allow to cool before storing in a container. *Store granola in mason jar or airtight container for up to 1 month*
