PUMPKIN SPICE STREUSEL MUFFINS
Yield: Makes 6 large muffins or 12 small muffins
Ingredients:
Pumpkin Spice Muffins:
1 3/4 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
1/2 cup coconut oil
1 cup dark brown sugar
1 cup canned pumpkin puree
2 large eggs
1/4 cup oat milk
Streusel Topping:
3/4 cup all-purpose flour
1/2 cup dark brown sugar
1 1/2 teaspoons pumpkin pie spice
4 tablespoons melted butter
Cinnamon Maple Glaze:
1/2 cup maple syrup
1 tablespoon confectioners’ sugar
1/4 teaspoon ground cinnamon
Instructions:
In a medium bowl, combine flour, cinnamon, baking soda, nutmeg, ginger and salt together; mix well and set aside.
In another medium bowl, add coconut oil, brown sugar, pumpkin puree, eggs and oat milk. Pour wet ingredients into dry ingredients. Fold everything together slowly until just combined.
Add batter to a prepared muffin pan and top with streusel topping. Bake at 350°F for about 20-25 minutes or until toothpick inserted in center comes out clean.
Allow to slightly cool then drizzle with cinnamon maple glaze.
