SIMPLE HOMEMADE TOMATO SOUP

This is easily the best homemade tomato soup recipe. It’s super simple and is made with less than 10 ingredients! Its extra flavor and sweetness comes from our Roma tomatoes straight from the garden and we add a touch of heavy cream to make it extra creamy. 

This soup is perfect for a cold rainy day or when you’re looking for an extra cozy recipe to warm up to. Make sure to serve with a warm buttery, grilled cheese! The nostalgic pair is hard to beat!

SIMPLE HOMEMADE TOMATO SOUP

Yield: Serves 4

Ingredients:
5 tablespoons extra-virgin olive oil, divided

1 yellow onion, roughly chopped

1 shallot, roughly chopped

8 cloves garlic, peeled and smashed

3 pounds fresh tomatoes, roughly chopped (Roma, campari, plum)

1 teaspoon salt

1/4 teaspoon ground black pepper

1 large handful of basil leaves

2 cups vegetable broth

1-4 - 1/2 cup heavy cream

Instructions:

In a large pot or dutch oven, add 3 tablespoons olive oil, onion, shallot and garlic cloves. Cook for about 10-15 minutes until onions and shallot start to caramelize and garlic get golden brown. Add tomatoes and 2 more tablespoons olive oil and cook for another 45 minutes until tomatoes are roasted. Add vegetable broth and basil. Bring to a light boil then simmer for additional 15 minutes. Use an immersion blender to blend to consistency you want. (We prefer to blend for a few minutes for an extra creamy consistency.) Add heavy cream and stir; remove from heat. Serve warm with a grilled cheese.
