SWEET CORN & WILD MAINE BLUEBERRY ICE CREAM

Serves: Makes 1 quart

Ingredients:

2 cups whole milk

1 cup heavy cream

4 large egg yolks

1/4 cup sweet corn powder 

1/2 cup light brown sugar

Pinch of salt

1 tablespoon vanilla extract

Instructions:

Combine milk, cream, corn powder, sugar and salt in a saucepan and set over medium-low heat. 

Heat the milk mixture until just simmering, about 5 minutes. 

Meanwhile, whisk the brown sugar, egg yolks, corn powder, and a pinch of salt until thick, about 2 minutes. Gradually whisk the hot cream into the eggs and sugar, then return the mixture to the saucepan and continue to cook, whisking constantly, until it thickens enough to coat the back of a spoon.

Stir in the vanilla and cool.

Just before churning, add the vanilla. Churn in an ice cream machine according to the manufacturer’s instructions. Serve immediately, or transfer to an airtight container and freeze for up to one month.
