APPLE CIDER DONUTS
Apple Cider Donuts
One of our absolute FAVORITE Fall desserts are Apple Cider Donuts! We have been picking so many apples this season so naturally we have been brainstorming all the Fall dessert recipes. This one definitely is the best by far!
Warm deep fried donuts coated in mixture of cinnamon sugar. The donuts are made with homemade apple cider which makes them 10x better too. Pro tip: Make the cider the day before so you can focus on the donuts the next day!
Ingredients:
3 cups apple cider
1 cup granulated sugar
3 1/2 cups all-purpose flour
1 tablespoon plus 2 teaspoons ground cinnamon, divided
1/4 cup light brown sugar, packed
1 tablespoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon baking soda
5 tablespoons butter, melted and cooled to room temp
2 large eggs
1 teaspoon vanilla extract
Vegetable oil for frying (about 4 cups)
Preparation:
In a small saucepan over medium-high heat, bring apple cider to a boil. Reduce heat and simmer for about 20 minutes until reduced to a cup. Let cider cool completely.
In a large bowl, combine flour, brown sugar, baking powder, salt, baking soda and 2 teaspoons cinnamon In a separate bowl, whisk together butter, eggs, vanilla and apple cider.Pour wet mixture over dry ingredients and stir using a rubber spatula just until just combined; cover and place into the refrigerator until chilled, about 1-2 hours. Meanwhile, while dough is chilling, combine granulated sugar and remaining 1 tablespoon cinnamon in a small bowl.
Remove dough from fridge. Working on a lightly floured surface, use a cutter to make 1/2 inch thick rounds of dough. Then use 2 inch cutter to punch out center hole for each donut. repeat with remaining dough (should make about 10-12 donuts depending on size)
In a large pot, over medium-high heat, add vegetable oil. When thermometer reads 375°F you’re good to go. I added one donut to the pot at a time, cooking 1 minute on each side. Transfer to a paper-towel lined baking sheet or plate to cool for 1 minute. Then roll donuts in cinnamon sugar mixture to coat evenly. Best served warm!
