CHOCOLATE CRINKLE COOKIES
Makes 12 cookies
Preparation:
3/4 cup all-purpose flour
1/2 granulated sugar
1/4 cup packed brown sugar
3/4 teaspoons baking powder
1/4 teaspoon salt
3 tablespoons unsalted butter, melted and cooled
6 tablespoons unsweetened cocoa powder
1 large egg
1 egg white
1 teaspoon vanilla extract
1/2 cup confectioners’ sugar
Preparation:
Preheat oven to 325°F. In a large bowl, whisk together flour, sugar, brown sugar and baking powder. In a separate bowl combine cocoa powder and melted butter. Then add eggs and vanilla extract. Add mixture into dry ingredients and mix well to combine.
Scoop 1 tablespoon of batter and roll into a ball then roll in confectioners sugar to coat. Add to a prepared baking sheet and bake for 12 minutes. Cool for 5 minutes on a wire rack.
