CHEWY MAPLE CINNAMON COOKIES
Happy hump day friends! We made it halfway through the week so I think we deserve some cookies, right? If you’re looking for something different than apple/pumpkin, these Chewy Maple Cinnamon Cookies will be your new favorite.
Chewy on the inside with a slight crispy outside and topped with a maple glaze to make it the ultimate Fall maple cookie.
CHEWY MAPLE CINNAMON COOKIES
Yield: Makes about 25-28 cookies
Ingredients:
2 1/2 cups AP flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup butter (1 stick), softened
1/2 cup packed dark brown sugar
1 large egg
3/4 cup maple syrup
1 1/2 teaspoons vanilla extract
Maple Glaze:
1/4 cup confectioners' sugar
3 tablespoons maple syrup
Instructions:
Preheat oven to 350°F and line a baking sheet with aluminum foil or parchment paper; set aside.
In a medium bowl, whisk together flour, baking soda, and salt together; set aside.
In a stand in mixer fitted with a paddle attachment, cream the butter and brown sugar together on medium speed until smooth and creamy. Add egg and beat on high until combined. Add maple syrup and vanilla and continue to beat on medium-high speed until fully combined.
Add dry ingredients to wet ingredients and mix on low until combined. Dough will look very soft. Cover and chill the dough for at least 1 hours or overnight for best results. Roll cookie dough into even balls (about 1 heading tablespoon of dough per cookie) Bake cookies for about 12 minutes or until golden brown.
Remove from the oven and cool cookies on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Make the maple glaze: In a small bowl, combine confectioners' sugar and maple syrup together until smooth.
