HEALTHIER BROCCOLI CHEDDAR SOUP
Healthier Broccoli Cheddar Soup

It’s a rainy, chilly, cozy Fall day here in NYC and I’m totally craving some soup! How good does that sound right about now?
This recipe honestly reminds me of the classic Panera Broccoli Cheddar Soup except it’s slightly healthier because it calls for skim milk instead of cream and less cheese! Ingredients:
2 tablespoons butter
1 tablespoon olive oil
1 small onion, finely chopped
1 carrot, peeled and julienned
1 large russet potato, peeled and cut into 1 to 2-inch chunks
3 cloves garlic, minced
1/4 cup all-purpose flour
3 cups vegetable broth
2–1/2 cups skim milk
4 cups chopped broccoli florets (about 1 large head of broccol
3/4 cup shredded cheddar cheese
Salt and ground black pepper to taste
Preparation:
In a large pot over medium-high heat, add butter and olive oil. Once melted, add onions, carrots and potatoes. Cook for about 5 minutes, stirring occasionally. Add garlic and continue cooking for additional 3 minutes until fragrant.
Gradually add in flour, stirring constantly with a whisk. Add vegetable broth and milk and bring to a boil. Reduce heat to medium-low and add broccoli and cheddar cheese. Add salt and black pepper to taste. Cover and cook over low heat for 15-20 minutes, stirring occasionally. Serve immediately!
