Peanut Butter Pumpkin Cups
Halloween is coming up! Does anyone else think about candy when they think about Halloween? I’m always in the mood for a sweet treat, and these Peanut Butter Pumpkin Cups are a slightly healthier alternative to candy. The only added sweetener is natural and it’s pure maple syrup!
Think classic peanut butter but with dark chocolate instead of milk, and peanut butter pumpkin instead of just peanut butter!
Ingredients:
2 cups dark chocolate chips
1 tablespoon coconut oil
1/4 cup creamy peanut butter
1/4 cup pumpkin puree
1 tsp pumpkin pie spice
1/4 cup pure maple syrup
1/2 teaspoon vanilla extract
Preparation:
Line a muffin pan with liners; set aside. Combine chocolate and coconut oil and add to double broiler method or melt in microwave. Fill 1/3 of the liner with melted chocolate. Place cups in freezer while you make pumpkin mixture.
In a medium bowl, combine creamy peanut butter, pumpkin puree maple syrup and vanilla extract. Mix well and add about 1 teaspoon of mixture onto each chocolate cup. Top each cup with remaining melted chocolate. Place in freezer for about 30 minutes or until firm. Store in the fridge for a 1-2 weeks and the freezer for a month!
