PASSION FRUIT LOAF CAKE
Yield: 1 loaf
Ingredients:
For the loaf cake:
½ cup extra-virgin olive oil
½ cup coconut oil
1 cup granulated sugar
1 ½ teaspoons vanilla extract
3 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup sour cream
2 tablespoons cream cheese, softened
1 teaspoon lemon juice
½ cup passion fruit pulp (about 3-4 passion fruit)
For the passion fruit glaze:
1/4 cup powdered sugar
2 tablespoons passion fruit juice
Instructions:
Preheat oven to 350F. In a large bowl with a whisk attachment, add olive oil, coconut oil, sugar and vanilla. Add eggs and whisk until smooth. Slowly fold in flour, baking powder, baking soda and salt, until almost combined.
Add in sour cream, cream cheese lemon juice, and passionfruit pulp until just combined.
Pour mixture into a prepared loaf tin. Bake for 45-55 minutes. Meanwhile, make the passion fruit glaze.
In a small bowl add powdered sugar and passion fruit juice; whisk until smooth.
Let loaf cake rest in for 30 minutes. Remove from loaf tin and drizzle with passion fruit glaze.
