POMEGRANATE POLYJUICE POTION

I’ve grown to really love this holiday over the years. And what’s a good holiday without themed cocktails? I’m so excited to share this Pomegranate Polyjuice Potion with you guys!
This recipe is so simple and spooky. It’s just 3 ingredients: vodka, pomegranate juice and homemade ginger syrup. The ginger syrup is so easy to make and your friends will be so impressed. We love to make extra syrup and store it in glass jars in the fridge for easy cocktail prep!
POMEGRANATE POLYJUICE POTION
Yield: Makes 2 cocktails
Ingredients:
3 ounces vodka
5 ounces pomegranate juice
1 ounce ginger simple syrup
Ginger Simple Syrup:
1 cup granulated sugar
1 cup water
1 large piece fresh ginger, peeled and cut into very thin slices
Instructions:
Add all ingredients to a mixer filled with ice. Shake well. Strain into a chilled martini glass. Garnish with pomegranate seeds.
Ginger Simple Syrup:
In a medium saucepan over medium-heat, bring the sugar and water to a boil; stirring to dissolve sugar. Add ginger and bring to a simmer. Remove from heat and let steep 30 minutes. Remove pieces of ginger. Refrigerate up to one month in glass jars.
