WINTER CITRUS SALAD WITH GINGER VINAIGRETTE

Ingredients:
For the salad:
2 cups baby butterhead lettuce, roughly chopped
1/2 cup kale, roughly chopped
1 avocado, pit removed and thinly sliced
1 clementine, peeled
1/4 cup candied pecans
1/4 cup cranberry orange cinnamon goat cheese, crumbled
1/4 cup grapes, sliced in half
1 baby cucumber, peeled and chopped
For the ginger vinaigrette:
1/4 cup extra-virgin olive oil
2 tablespoons freshly squeezed orange juice
1 tablespoon rice wine vinegar
1 teaspoon maple syrup
1-inch piece freshly grated ginger
Instructions:
Add all salad ingredients to a bowl; set aside. Add all dressing ingredients to a small bowl and whisk. Drizzle over salad. Store remaining dressing in mason jar for up to 1 week.
